Just Egg Review
Just Egg is a plant based egg-substitute that comes in both a liquid and folded patty form. It’s made mainly from mung bean protein and water, with additional flavors from dehydrated onion and garlic.
We’ve tried both the Just Egg liquid and patties. They’re good for different uses, and are both really easy to cook. We really like the liquid version for vegan scrambles or omelets. We haven’t tried it for baking, but I’ve heard it works well as an egg replacer in baked goods. For cooking, we add a little vegan butter or oil to a pan over medium high heat, then add the Just Egg with a little salt, pepper, and black salt, which gives a bit more of an eggy flavor. Then, just stir or shake the pan until the Egg starts to firm up, and it’s ready to eat.
You can cook the folded patties in a pan with a little butter, or in the toaster or the microwave. They’re great on breakfast sandwiches with some vegan cheese melted on top and some sausage . Both versions of Just Egg have a nice, light flavor and texture that isn’t overpowering in dishes, and compliments other breakfast foods well.
